Raspberry-Glazed Chicken

It's always fun to try a new recipe - especially when you find out you love it! This was DELICIOUS!
This recipe serves 4 - I adjusted my recipe for one and the extra sauce I put in a bag to freeze for another time.

What you'll need //
4 boneless skinless chicken breasts (I only cooked one)
cooking oil
fresh raspberries (optional)
Sauce //
2 Tbsp balsamic vinegar
2 Tbsp olive oil
2 Tbsp lemon juice (I just squeezed one fresh lemon in my bowl)
2 tsp Dijon Mustard (this ingredient scared me as I HATE mustard, but I couldn't really taste it)
1/3 cup Raspberry Jam
1 Tbsp raw honey
1 Tbsp minced red onion
1/2 tsp salt
ground pepper to taste
Start by mixing your sauce ingredients into a medium bowl. After the sauce is all mixed, sliced your chicken and place it in a skillet with a little cooking oil.
Make sure your chicken is cooked/browned on both sides. Once your chicken is browned, add most of your sauce to the skillet (this is where I put some in a freezer bag to freeze for later). Cover the chicken and sauce until the chicken is fully cooked (around 20 min).
I prepared some rice additionally and plated my dish. Once plated, spoon over a little more sauce and garnish with some fresh raspberries! Enjoy!
