Cowboy Caviar

This is my favorite snacky recipe! Its fresh, delicious and oh so addicting! I tend to switch mine up from the original recipe just a little - so the revised recipe is what I will share with you today!



What you will need //

  • 1 can black beans

  • 1 can black eyed peas

  • 1 can sweet corn

  • 1 cup cilantro - chopped (I eyeball this)

  • 2 red bell peppers - chopped

  • 2 orange bell peppers - chopped

  • 2-3 jalapeños - diced (this is a Kelsey add-in)

  • 1/2 cup red onions - diced

  • 1 tsp. chili powder

  • 1/2 tsp. cayenne pepper

  • 1/2 tsp. salt

  • 2 1/2 Tbsp honey (you can use 1/4 sugar if you like)

  • 1/3 cup olive oil (it calls for a 1/2 cup but I find it gets too soupy with all the liquids)

  • 1/4 cup white wine vinegar (it calls for 1/3 cup)

  • 1 lime - fresh squeezed juice

  • 1/4 tsp. garlic powder

  • Tortilla Chips!


I start by emptying the can of black beans, black eyed peas and corn into a strainer and rinsing them. I then let them sit to dry a bit while I chop my veggies.


Chop up the red and orange bell peppers, jalapeños, and red onion into a decent sized bowl. Start adding the rest of the ingredients and then your black beans, black eyed peas and corn as well. Mix it all together and let it sit in the fridge until chilled and marinated.


Grab some chips and chow down! This is also a great topper to homemade tacos or baked chicken or added on top of a salad - AND sometimes fun to add in a little mango for sweetness!
